Could Side Scroller mode be used to create a fighting game like Mortal Kombat or Street Fighter?

Likely not. At the moment, SSP mode isn't very advanced. It has pickups and such, and you can shoot discs (that's what I think they are) to harm enemies, but you couldn't do fighting with it. Not at the moment.

A fighting game would be a good use of SSP.

You easily could make a 3D fighting game with RPG mode, but your requested 2.5D fighting game is very difficult to create.
Kelgar is an advanced RPG beeing developed in Sandbox
